    The luxury of Umbria as you have never experienced it before

    The Radici restaurant is characterised, as its name suggests, by the selection and promotion of the fruits of a rich and fascinating territory at the corner of Umbria, Lazio and Tuscany. It was created with the desire to revisit centuries-old foods and traditions in a modern key.

    The care with which the raw ingredients are chosen according to seasonality reflects the fundamental principle that the well-being of our guests is at the centre of our attention.

    Radici Restaurant is synonymous with luxury but also with travel. A journey through the ingredients of Umbria, masterfully orchestrated by the hands of Chef Gabriel Collazzo.

    The wine list is curated by maître sommelier Mauro Clementi. It comes from wine producers with important histories, hard work in the vineyard and a great terroir on their side.

    We offer not only local labels, but also national and foreign ones, all linked by the same ideals.

    It is fun and stimulating to create a “tailor-made suit” for the guest and accompany them in their choice of wine or glass pairing. Radici Restaurant customers love to experiment and let themselves be guided by the maître d' and his assistants, with a desire to discover something new.

    Memory and memories, tradition and evolution, technique and simplicity, the cuisine refines its beauty between past and future. Guardians of memory and creators of emotions, our cuisine does not impose, but invites.

    Sustainability and seasonality guide the natural rhythm of the Earth, evolving our cuisine in the pursuit of emotions. A place where the small are great, a dish becomes a sustainable act, restoring value to a gastronomic heritage that speaks of landscapes, people and “Roots”.

    All the stages of your journey through the excellence of flavours

    A dinner at Radici is a ritual to be savoured at leisure. The Chef's welcome and three starters are served in sequence at the table. Guests can then choose from three alternatives.

    • Act I “Radici”: four courses with vegetarian ingredients carefully selected by the chef.
    • Act II “Origine”: four courses with local ingredients carefully selected by the chef. • Act III “Condividere”: seven courses from land and sea carefully selected by the chef.

    Wine

    Again, roots… but of the vine

    The Radici restaurant’s wine list is refined and highly select. The winemakers do their job with passionate dedication and determination, and taste becomes art. The wines selected by us are symbiotically rooted in local traditions. Roots... again… that sink into the soil and are part of a past rich in history. Our wines combine with the flavours of the earth and all the refinement of the dishes prepared by our Chef. Our Maitre Sommelier will be happy to guide you toward a ‘bespoke’ experience that enhances the winemakers’ own efforts.

    Awards

    A young restaurant but already repeatedly award-winning

    The Radici restaurant obtained in 2018 the award known as the Cappello delle Guide de l’Espresso, thus entering the class of the 2,700 top Italian restaurants. Since 2019 it has been recommended by the Guides of the la Repubblica daily newspaper.

    At the end of 2019 it also appeared in the Michelin Guide, with Three Forks, confirmed in 2020, signifying excellent quality of service, decor, atmosphere, wine list, waiter service, seating arrangements and all other details conducive to an overall experience of excellence, including food and beverages (of course).

    Since 2020 it has also boasted the Gambero Rosso's Two Forks, attesting to exceptional quality of cuisine, ambience and service. Also since 2020 it has been recommended by the Touring Club guide.

    Chef

    Gabriel Collazzo

    The project is led by chef Gabriel Collazzo, born in San Miniato. His cuisine is the result of a fusion between the rural traditions of Tuscia, the solidity of French technique and the influences of Japan: a dialogue between worlds that share respect, moderation and simplicity.

    The heart of the offering is Umbrian, with seasonal products from small ethical supply chains, forgotten varieties, biodiverse crops and homemade preparations.

    Traditional recipes – such as legumes, bitter herbs and the use of the barbecue itself – are reworked and restructured in a modern key, while preserving their soul.

    Maitre Sommelier

    Mauro Clementi

    Born in Umbria in 1983, after graduating from hotel management school, he gained extensive experience in restaurants with a strong customer focus.

    He was promoted to maître d' while still very young and extremely motivated to learn more and do better.

    For him, the job of maître d' is a vocation, human before professional. According to Mauro, customers should be made to feel at home. People go to restaurants not only to eat but also to socialise, to enjoy a happy experience. This is what luxury means to Mauro: putting guests at ease from the moment they walk in the door with a smile.

    It is therefore no surprise that his CV boasts a list of two- and even three-starred chefs, nor that he sets himself increasingly high standards in response to an ever more demanding clientele.

    He contributed to the conquest of the first Michelin star for an important restaurant in central Italy.

    He has been maître d'hôtel and sommelier at the Radici restaurant in Borgo La Chiaracia since day one.
